Spaghetti Squash with Italian Sauce

This is a healthy version of a delicious Italian comfort food.

Recipe Ingredients

  • 8 large Fresh Basil Leaves, Chopped
  • 2 large Garlic Cloves, Minced
  • 1 pound Ground Beef
  • 1/4 cup Italian Parsley, Chopped
  • 4 tablespoon Olive Oil
  • 1 medium Green Bell Pepper, Diced
  • 1 medium Red Bell Pepper, Diced
  • 1 tablespoon Sugar
  • 28 ounces Whole Can Tomatoes
  • 1 medium Yellow Onion, Diced


1. Wash spaghetti squash and cut in half lengthwise. Brush with olive oil and sprinkle with salt and pepper. Place squash flesh side up on sprayed baking sheet and bake at 375 degrees for about 45-50 minutes, until fork punctures skin easily.

2. Meanwhile heat a skillet over medium heat. Heat 2 tablespoons olive oil until hot. Add onion and garlic and cook about five minutes, until onion is translucent. Add peppers and let cook another 5 minutes, until the peppers are soft.

3. Add meat and cook about 8 minutes, until meat is no longer pink. Add tomatoes, sugar, basil and parsley. Cook about 20 minutes, until sauce thickens.

4. Scrape squash with a fork to create "noodles". Spoon some noodles into a bowl and then top with meat sauce. Grate pecorino over the top and serve warm.
