A Simple Slow Cooker Beef Curry recipe.

Recipe Ingredients

  • 1 medium Onion, coarsely chopped
  • 2 tablespoon Butter
  • 1 1/4 pounds Chuck Roast, cut into cubes
  • 3 cloves Garlic, minced
  • 2 cups Coconut Milk
  • 1/4 cup Peanut Butter
  • 3 tablespoon Curry powder
  • 3 tablespoon Brown Sugar
  • 2 cups Beef Broth


1. Place onion in slow cooker. 2. Melt butter in skillet over medium high heat. Cook the beef and garlic together in the melted butter until the beef is browned on all sides. Transfer beef and garlic to slow cooker while keeping the beef drippings in the skillet. 3. Return skillet to medium high heat. Stir in the coconut milk, peanut butter and curry powder. Cook and stir until peanut butter melts. Pour this mixture over the beef in the slow cooker. 4. Turn slow cooker on low and add brown sugar and beef broth. 5. Cook on low about 6 hours.
