Let it Snow- Dinner is Done!

We have had an unusually warm and dry winter season in Utah this year.  When I woke up this morning and saw a foot of snow on the ground I briefly did not recognize the white stuff. My daughter went skiing with a friend and it took them 4 hours to get to Snowbird Resort- usually a 25 minute drive.  Needless to say, the long awaited snow is something skiers and snowboarders have been waiting for and yes, I’m told the fresh powder was worth the four hour adventure.


While I love skiing, I’m super excited about the colder temperatures and hampered driving conditions for a different reason altogether.  I finally feel inspired to dish up some wintry recipes.  With no desire to head out to the grocery store in this weather I’m grateful I did my meal planning this week and I have all the ingredients on hand for a simple heart and belly warming dinner tonight and a few more this week.  Here’s a glimpse of what I’ll be serving until I feel like venturing out for more ingredients.
