Shrimp and Black Bean Salad

A zesty and delicious salad that packs a punch with flavor and freshness. 

Recipe Ingredients

  • 1 1/2 cups Black Beans, rinsed
  • 1 cup Cherry Tomatoes, quartered
  • 3 teaspoons Chipotle Chile in Adobo, minced (see tips below)
  • 4 tablespoons Cider Vinegar
  • 4 tablespoons Cilantro, chopped
  • 1 teaspoon Cumin
  • 3 tablespoon Extra Virgin Olive Oil
  • 1 small Poblano Pepper, chopped
  • 4 tablespoons Scallions, chopped
  • 1 pound Shrimp, cooked and deveined, cut into 1/2 inch pieces)


  1. Whisk vinegar, oil, chipotle, cumin and salt in a medium bowl. Add shrimp, beans, tomatoes, poblano pepper, scallions and cilantro. Toss to coat.
  2. Serve room temperature or cold. 

TIPS: Chipotle chile in adobo sauce are smoked jalapenos packed in a flavorful sauce. Look for the small cans with Mexican foods at most grocery stores. Once opened, they will keep up to 2 weeks in the fridge or 6 months in the freezer.
