A simple Sassy Chicken Soup recipe

Recipe Ingredients

  • 30 ounces Chicken Broth
  • 2 pounds Chicken Breasts, cooked
  • 15 ounces Black Beans
  • 1 can Tomatoes, with Green Chilies
  • 1 can Corn Kernels, drained
  • 1 tablespoon Parsley, chopped
  • 1/2 teaspoon Paprika
  • 1/4 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground Pepper


1. If you are starting with uncooked chicken, sear it on both sides in a frying pan then finish in the oven until cooked through. 2. In a large stock pot add all remaining ingredients. Shred the cooked chicken and add it in. Cover and cook on medium heat for about 30 minutes. 3. Top with sour cream and crumbled chips if desired.
