Blackened Salmon

This is a spicy treat. I use a mixed blend of peppers but you may use what you desire. I often cook this outside in my barbeque on the side burner so I don\'t cough out the house from the pepper cooking.

Recipe Ingredients

  • 1 tablespoon Ground Red Pepper, cayenne or mixture of red peppers for blackening
  • 1 tablespoon Olive Oil
  • 4 Salmon Fillets, 6 oz +- each


Heat your pan quite hot without placing the fish in it. Shake hot pepper on one side of fish. If you like it really spicey place it on both sides. Depending on your spice tolerance coat with peppers as light or heavy as you desire. Place fish on hot pan, you can add a little olive oil or butter (to your own taste) first but it is not necessary as the salmon will cook in it\'s own oil as soon as it gets hot. I lightly spray some olive oil on it. Cook to desired doneness. I like mine a little raw inside but others in my family like it well done. Serve it over a bed of rice ( brown or white ) and or with a side salad. A very simple, tasty and healthy meal.
