A simple Rustic Bison Chili recipe.

Recipe Ingredients

  • 1 pound Ground Bison
  • 1 medium Yellow Onion, chopped
  • 2 cloves Garlic, minced
  • 1 small Red Bell Pepper, chopped
  • 3 tablespoon Chili powder
  • 2 teaspoon Salt
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Allspice, Ground
  • 2 cans Diced Tomatoes, 14.5 oz cans with juice.
  • 2 cans Tomato Sauce, 8 oz cans.
  • 1 can Pinto Beans, rinsed and drained
  • 1 can White Beans, rinsed and drained


1. Brown bison meat in a skillet over medium-high heat until cooked through. Drain any excess fat then add onion and garlic. 2. Saute five minutes until onion and garlic are tender then add in bell pepper, chili powder, salt, oregano, cinnamon, cumin, black pepper and allspice. Cook two minutes. 3. Add tomatoes, tomato sauce and beans. Stir to blend then simmer for 45-60 minutes. Serve with condiments such as sour cream, cilantro or cheese if desired.
