Red Potato and Green Bean Saute

Such a wonderful dish! Also makes a great entree in the summer.

Recipe Ingredients

  • 1 pound Baby Red Potatoes
  • 3 tablespoons Basil, fresh, chopped
  • 1 1/2 tablespoons Extra Virgin Olive Oil
  • 1 pound Fresh Green Beans
  • 1 cloves Garlic, minced
  • 1/2 teaspoon Pepper
  • 1 teaspoon Salt


  1. Cut potatoes in half. Trim green beans.
  2. Bring a large pot of salted water to a boil.
  3. Add potatoes; cook about 15 minutes, or until almost tender.
  4. Add beans; cook about 3 minutes, or until tender. Drain well.
  5. In a large skillet, heat oil over medium heat. Mince and add garlic, cook, stirring, for 30 seconds.
  6. Add potatoes, beans, and salt and pepper to taste.
  7. Cook about 2 minutes, or until heated through, tossing to coat.
  8. Add basil and toss once more before serving.
