Recipe Ingredients

  • 1 cup Pineapple Juice
  • 2 tablespoons Butter
  • 4 teaspoons Corn Starch
  • 1/2 cup Sugar
  • 2 tablespoons Fresh Mint, chopped
  • 2 pounds Carrots, sliced julienne


  1. Wash and slice carrots.
  2. Chop mint.
  3. Cook carrots in boiling water until tender and drain.
  4. Mix sugar, cornstarch, and pineapple juice in saucepan and cook for 3 minutes.
  5. Stir in butter and mint.
  6. Pour over carrots and serve.
