Mango and Apple Salad

This is a favorite summer salad that can be served as a main dish or a side.  You can use your favorite kind of apple- I prefer Granny Smith. 

Recipe Ingredients

  • 1 large Apple, cored and diced
  • 1 tablespoon Balsamic Vinegar
  • 3/4 cup Cashews, toasted
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Ginger
  • 1 large Mango, peeled and cubed


1. Combine vinegar, cinnamon and ginger in a bowl and whisk until well combined.

2. Toss mango, apple and cashews together in serving bowl and drizzle with dressing. Gently stir together. Should be served promptly so apples don't brown.
