Italian Stuffed Bell Peppers

A simple Stuffed Pepper recipe with meat and vegetables!

Recipe Ingredients

  • 1 pound Lean Ground Beef
  • 6 large Mushrooms
  • 1 cup Frozen Corn
  • 2 large Celery Stalks
  • 1 medium Onion
  • 2 clove Garlic Cloves
  • 2 can Tomatoes
  • 2 tablespoon Basil
  • 1/2 teaspoon Red Pepper Flakes
  • 1 1/2 cup Long Grain Rice
  • 1/4 cup Italian Parsley
  • 6 large Bell Peppers
  • 1 cup Shredded Cheese


1. Brown the ground beef in a large pan over medium high heat until cooked almost through. 2. Add mushrooms, corn, celery,onion, garlic and cook about 3 minutes until vegetables are softened. 3. Stir in diced tomatoes, tomato paste, basil, oregano and red pepper flakes. 4. Season with salt and pepper to taste and cook 15-20 minutes. 5. Stir in cooked rice and chopped parsley and cook about 5 minutes longer until rice is warm. 6. Meanwhile cut off tops of peppers and spoon out the ribs and seeds, then rinse. Lightly sprinkle inside of peppers with kosher salt and place in a microwave safe dish with 1/4 cup water. Cover with plastic wrap and microwave 5 minutes or until they start to soften. 7. Transfer peppers to a 3 quart baking dish and fill the peppers with the hot meat and rice mixture. Sprinkle tops with cheese and bake for 20 minutes or until peppers are tender and cheese is melted and golden. 8. Serve hot. Enjoy!
