Italian Open Sandwich

This fresh open sandwich features the bread as a delicious foundation for the marriage of delicious Italian flavors.  You could also use smaller slices of bread and use these as appetizers.

Recipe Ingredients

  • 1 pound Ricotta Cheese
  • 1/4 cup Lemon Zest, about 2 lemons
  • 1/2 cup Olive Oil
  • 4 slices Artisan Bread, your choice of flavor
  • 2 large Avocados, sliced
  • 1 pint Cherry Tomatoes, cut in half horizontally
  • 4 teaspoons Sesame Seeds, toasted
  • 1 small Red Onion, sliced


1. Mix the ricotta with 1/4 cup olive oil and the lemon zest. Add a dash of salt and pepper.

2. Top four slices of bread with the ricotta mixture.

3. Arrange the avocado slices, the tomatoes and red onion slices on top of the bread.

4. Garnish each sandwich with the toasted sesame seeds. Arrange on a plate and lightly drizzle with olive oil before slicing.
