Honey and Lime Pork Mini Tacos

We took one of our favorite taco recipes and shrunk it down to fun size!

Recipe Ingredients

  • 3 teaspoons Ground Cumin
  • 3 teaspoons Smoked Paprika
  • 2 pounds Pork Tenderloins
  • 1/2 cup Honey
  • 1/4 cup Lime Juice
  • 1/4 cup Fresh Cilantro, chopped
  • 1/2 cup Cabbage, shredded
  • 1 large Roma Tomatoes, chopped
  • 1/2 cup Salsa
  • 1/2 cup Cheddar Cheese
  • 4 large Soft Shell Tortillas


1. Preheat oven to 400 degrees. Using a 3 inch round cookie cutter cut out mini tortillas from a large tortilla. Put in between bottom of muffin cups on a muffin tin by turning muffin tin upside down. Place in oven and cook about ten minutes, until taco shells hold their shape. Let cool.

2. In a small bowl combine the cumin and paprika. Rub into pork loin and place in slow cooker.

3. In another small bowl whisk the honey and lime juice together. Pour over pork in slow cooker and cook on low 6-8 hours.

4. Shred the pork using two forks and mix with the juices inside the slow cooker.

5. Fill taco shell with pork and desired toppings. Enjoy!
