Recipe Ingredients

  • 2 large Boneless Skinless Chicken Breasts
  • 2 tablespoons Canola Oil
  • 1/2 cup Cheddar Cheese, shredded
  • 1 bunch Cilantro, chopped
  • 8 medium Corn Tortillas, cooked
  • 1/2 cup Italian Salad Dressing


  1. Heat oil in skillet on medium high heat. Add chicken breasts. Cook about three minutes on each side. Add salad dressing to chicken and turn to coat. Cook an additional five minutes or so until chicken is cooked through.
  2. Let cool slightly and then dice chicken into bite size pieces. Center chicken in cooked tortillas (I heat them on a griddle).
  3. Top with cheese, cilantro and whatever else you desire (sour cream, diced tomatoes, salsa, etc.) Enjoy!
