Fire Roasted Tomato Soup

This incredible soup is best served with a dallop of sour cream on top. Sometimes I even like to add a few tortilla chips into the bowl when I\'m serving it. Just the right thing when you want to eat something warm but not too heavy. If you want a truly vegetarian version, substitute vegetable broth for the chicken broth.

Recipe Ingredients

  • 2 tablespoons Basil, fresh is best
  • 1 tablespoon Butter
  • 1 can Chicken Broth, about 14 ounces
  • 2 cans Fire Roasted Tomatoes
  • 2 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 1/4 teaspoon Red Pepper
  • 1 teaspoon Sugar
  • 1/2 cup Whipping Cream


  1. Chop onion. Melt butter. Add onion, garlic, basil, red pepper flakes, broth, tomatoes, and sugar.
  2. Bring to a boil. Allow to simmer at least 30 minutes.
  3. Divide soup in half and blend each half in an osterizer. (Allow soup to cool slightly before blending, and make sure to hold the lid on tight).
  4. Return soup to pot. Add whipping cream and stir.
  5. Serve with sour cream.
