Chicken Spaghetti Southwest

A delicious southwestern dish that adds a bit of spice to a classic meal.

Recipe Ingredients

  • 1 can Black Beans, rinsed and drained
  • 2 large Boneless Skinless Chicken Breasts
  • 1 1/5 tablespoons Cilantro
  • 1/2 cup Corn, frozen
  • 1/8 teaspoon Crushed Red Pepper
  • 1/2 teaspoon Cumin
  • 1 can Green Chilies, diced
  • 1 1/2 cups Marinara Sauce
  • 1 teaspoon Olive Oil
  • 12 ounces Spaghetti, cooked and drained


  1. Cut chicken into thin strips. Saute in olive oil until no longer pink.
  2. Add marinara sauce, black beans, corn, chilies, cilantro, cumin, and red pepper.
  3. Bring to a boil; reduce heat and simmer 5 minutes.
  4. Spoon sauce over spaghetti and serve.
