Chicken Salad with Almond Cream Sauce

This is a simple, healthy and oh so delicious meal perfect for Spring!

Recipe Ingredients

  • 2 large Boneless Skinless Chicken Breasts, cooked and diced
  • 1 cup Almonds, raw
  • 2 tablespoons Cider Vinegar
  • 1 teaspoon Sea Salt
  • 1 teaspoon Cayenne Pepper
  • 2 cups Frozen Peas, thawed
  • 1 bunch Green Onion, chopped
  • 2 tablespoons Dill, freshly chopped
  • 4 cups Romaine Lettuce, chopped


1. To make almond cream: Place almonds in a bowl and cover with boiling water. Let soak 30 minutes. Drain and discard liquid. Combine 1/2 cup water, almonds, cayenne, salt and vinegar in a blender. Blend until smooth. You can add more water a little at a time until you have a puree.

2. Place diced chicken in a large bowl. Add almond cream, peas, green onions and dill, and toss to combine. Serve salad on top of lettuce or on croissants.
