Chicken Risotto

Simple and delicious! You may want to substitute one pound peeled shrimp for the chicken.

Recipe Ingredients

  • 1 bag Baby Spinach, about 9 ounces
  • 1 pound Chicken Tenders, cut into one inch pieces
  • 1 box Garlic Primavera Risotto, about 12 ounces, some come with seasoning packets
  • 5 cups Water


  1. Sprinkle chicken with 1/4 tsp. salt and pepper.
  2. Heat 1 tbls. oil in 12 inch skillet over high heat.
  3. Cook chicken about 3 minutes, turning once.
  4. Add risotto and stir for 30 seconds. Stir in water and seasoning packets.
  5. Bring to a boil and reduce heat.
  6. Simmer uncovered 15 minutes, stirring occasionally.
  7. Top with greens, reduce heat to low.
  8. Cover and cook 5 minutes, stirring once until rice is tender.
  9. Let stand 5 minutes.
