Picnic Chicken Salad

This salad is sure to be a crowd pleaser.

Recipe Ingredients

  • 3 cups Chicken, cooked and diced
  • 2 tablespoons Ginger
  • 1/2 bunch Green Onions, chopped
  • 1/2 teaspoon Pepper
  • 1 large Red Pepper, diced
  • 1/3 cup Rice Vinegar
  • 6 ounces Rotini Pasta, cooked as per package directions
  • 1/2 cup Salad Oil, such as vegetable, corn or peanut
  • 1 cup Salted Cashews
  • 1/3 cup Soy Sauce
  • 6 cups Spinach


1. Boil chicken 15 minutes until cooked through. Let cool then dice into bite size pieces.

2. Cook pasta according to package directions.

3. Mix chicken, pasta, spinach, cashews, red pepper, and green onion.

4. To prepare dressing: Mix salad oil, soy sauce, rice vinegar, ginger, and pepper.

5. Toss chicken and pasta mixture with dressing just before serving.
