Chicken Enchilada Casserole III

This flavorful Mexican dish smells as good as it tastes.

Recipe Ingredients

  • 1 pound Chicken, cut into small pieces
  • 1 large Onion, chopped
  • 2 tablespoon Olive Oil
  • 2 cans Cream of Chicken Soup
  • 1 cup Sour Cream
  • 1 can Diced Green Chilies
  • 2 cups Cheddar Cheese, or Colby Jack, grated
  • 1 package Tortillas


1. Saute onion with olive oil in large frying pan.

2. Add chicken pieces and cook thoroughly.

3. Stir in soup, sour cream, and chilies.

4. Stack tortillas and cut into strips (make sure your knife is nice and sharp!)

5. Grease a 9x13 inch pan. Layer half of cut tortillas, half of chicken mixture, and half of cheese. Repeat.

6. Bake at 350 for 30 minutes.
