Cheesy Chicken and Rice

A delicious classic. For a healthier version, use brown rice.

Recipe Ingredients

  • 2 cup Mixed Vegetables, frozen
  • 4 large Boneless Skinless Chicken Breasts, halved
  • 1/2 cup Cheddar Cheese, shredded
  • 1 can Cream of Chicken Soup
  • 3/4 cup Rice, long grain, uncooked
  • 1/4 teaspoon Pepper
  • 1/2 teaspoon Onion powder


  1. Combine soup, rice, onion powder, black pepper, and 1 and 1/3 cups water. Add vegetables. Stir.
  2. Pour into an 11x8 casserole sprayed with non-stick spray. Top with chicken.
  3. Bake at 375 for 50 minutes, covered.
  4. Top with cheese, and bake additional 2 minutes, until cheese melts.
