Blue Cheese Potato Salad

Tangy and sweet, this is a twist on the classic potato salad that is sure to be a crowd pleaser!

Recipe Ingredients

  • 3 slices Bacon
  • 1 1/2 ounces Blue Cheese Crumbles
  • 1 bunch Green Onions, chopped
  • 1/2 cup Olive Oil
  • 2 pounds Red Potatoes
  • 3 tablespoons White Distilled Vinegar


  1. Brown bacon over medium heat in frying pan. Drain, crumble and set aside.
  2. Boil potatoes until tender, about 15 minutes.
  3. When cool, chop leaving skins on.
  4. Whisk together oil, vinegar, green onions, salt and pepper to taste.
  5. Add potatoes, bacon and cheese and toss together.
