Barbecue Chicken Salad

Great as a main dish or side, especially in the summer when grilled and chilled dishes are key!

Recipe Ingredients

  • 1 large Avocado, diced
  • 1 cup BBQ Sauce, any brand
  • 1 can Black Beans, drained
  • 2 large Boneless Skinless Chicken Breasts, halved
  • 1 bunch Cilantro, chopped
  • 2 large Corn, cut from cob
  • 1 head Green Leaf Lettuce, rinsed and torn
  • 1/2 cup Ranch Salad Dressing
  • 1 head Red Leaf Lettuce, rinsed and torn
  • 2 medium Tomatoes, diced


  1. Spread 1/2 cup bbq sauce on chicken breasts and grill over high heat about six minutes per side.
  2. Remove from heat, cool and slice.
  3. Mix together the two lettuces, tomato, cilantro, corn and black beans.
  4. Top with grilled chicken. Mix together the ranch dressing and the remaining 1/2 cup BBQ sauce.
  5. Toss with salad.
