Recipe Ingredients

  • 2 cups Balsamic Vinegar
  • 4 large Boneless Skinless Chicken Breasts, halved
  • 2 tablespoon Olive Oil
  • 4 large Sweet Potatoes, peeled and cut into 2 inch pieces


1. Preheat oven to 400 degrees. Place potatoes on a baking sheet, drizzle with olive oil and season with salt and pepper. Bake for 12 minutes.

2. Meanwhile, place chicken breasts in baking dish. Pour 1 cup of vinegar over chicken, season with salt and pepper. Cover with foil.

3. Place baking dish with chicken alongside potatoes in oven and bake 25 minutes. Reduce heat to 350 and bake another 20 minutes.

4. Pour remaining cup of vinegar into a small saucepan and cook over medium heat until reduced to 1/2 cup. Place chicken atop potatoes and drizzle with reduced vinegar to serve.
