A simple Autumn Vegetable Pot Pie recipe!

Recipe Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic Cloves, minced
  • 1/4 cups Flour
  • 2 1/2 cups Vegetable Broth
  • 1/4 cup Milk
  • 2 cups Assorted Vegetables, diced
  • 2 large Bay Leaves
  • 6 large, Buttermilk Biscuits, uncooked


1. Preheat oven to 425 degrees. 2. Add olive oil to a large saucepan over medium heat, then add onion and garlic. Let cook until soft, about 5 minutes. 3. Add the flour and stir with a whisk then slowly whisk in broth. 4. Add milk, bay leaves and vegetables. Let mixture simmer about ten minutes until vegetables are getting soft and the liquid has thickened. 5. While sauce is thickening prepare biscuits if using homemade. 6. Discard the bay leaves and divide the mixture evenly among six lightly greased ramekins or an 8x8 baking dish. Top with unbaked biscuits and brush the tops of biscuits with melted butter. Set ramekins on baking dish and bake until the biscuits are golden and bubbly, about 14 minutes.
