A simple Asian Butternut Squash recipe!

Recipe Ingredients

  • 1 tablespoon Peanut Oil
  • 1 piece, Fresh Ginger, peeled and grated
  • 2 sticks of Cinnamon
  • 4 tablespoon Soy Sauce
  • 1 cup Warm Water
  • 1 tablespoon Brown Sugar
  • 1 dash Chinese Five Spice
  • 1 bunch Cilantro
  • 1 medium Butternut Squash
  • 3 small Star Anise


1. Halve the squash lengthwise and peel. Scoop out seeds and cut into bite size pieces. 2. In a large frying pan heat the oil over medium high heat. Add the ginger and whole spices and saut' for a few seconds. Add the squash and cook for about one minute. Add in soy sauce, cook one more minute then add in water. Top with lid and cook about ten minutes, stirring occasionally, until squash is tender. 3. When squash is tender remove lid and stir in brown sugar and Chinese five spice. Toss to combine well and allow sauce to thicken for another minute. 4. Remove from heat, garnish with cilantro and serve immediately.
