2 sweet potatoes 1 Medium sweet onion, chopped 2 Medium apples, peeled, cored and chopped 3 carrots, peeled and chopped 4 boneless, skinless chicken breasts 1/2 cup BBQ sauce 2 cups cranberries
Preheat oven to 375 degrees. Lightly grease baking dish. Pierce potates several times with a fork and cut in half. Place in microwave safe bowl, pour water about 1/2 inch deep and cook on high for 10 minutes. Arrange onion, apple and carrots in bottom of baking dish Brush the BBQ sauce on both sides of the chicken and lay atop the vegetables. Peel the sweet potato and cut into large chunks then spread around baking dish. Sprinkle the cranberries over the dish. Bake about 50 minutes.
