Pumpkin Stew

A hearty and fun fall recipe!  Use the leftovers from carving jack-o-lanterns if you have them!

1 pound stew meat
1/2 red onion, chopped
11/2 cups pumpkin, peeled and cubed
2 Medium carrots, thinly sliced
2 Medium celery stalks, thinly sliced
1 garlic clove, minced
1 can Beef broth

Mix all ingredients in slow cooker. Cook on low 4-6 hours or on high 3-4 hours. Before serving stir in 3 tablespoons flour to thicken if desired. Do not overcook or pumpkin will turn mushy.
