A simple and fun favorite for all ages!
16 ounces refried beans, pinto or black 1 cup cheddar or favorite mixed cheeses, shredded 4 cup flour or wheat tortillas 2 cup tomatoes, sliced 3 cup lettuce, shredded 1 cup sour cream
Warm tortillas one at a time in a clean, empty skillet. Remove and use pan to heat beans, stirring constantly until warmed through. Spread beans inside middle of tortilla. Add cheese and any other of the condiments you want. Fold the top and bottom ends up, then fold over each side.
| | 2. | Cheesy Chicken and Rice | | | Category: Chicken / baked A delicious classic. For a healthier version, use brown rice.
1 can cream of chicken soup .75 cup rice, long grain, uncooked 1/2 teaspoon Onion Powder 1/4 teaspoon pepper 2 cup mixed vegetables, frozen 4 cup boneless, skinless chicken breasts, halved 1/2 cup cheddar cheese, shredded
Combine soup, rice, onion powder, black pepper, and 1 and 1/3 cups water. Add vegetables. Stir. Pour into an 11"x8" casserole sprayed with non-stick spray. Top with chicken. Bake at 375 for 50 minutes, covered. Top with cheese, and bake additional 2 minutes, until cheese melts.
| | 3. | Barbecue Turkey | | | Category: turkey Great for Thanksgiving leftovers or anytime. Use your favorite buns to make sandwich. You can also serve the meat by itself.
2 cup turkey thighs, skin removed 1/2 bottle BBQ sauce, 9 ounces total 1 Medium onion, sliced thin 6 Medium buns
Cook turkey in slow cooker with BBQ sauce low 8 hours or until turkey is falling off bone. Remove turkey to a plate and refrigerate until cool enough to handle. Remove 3/4 cup sauce from slow cooker and set aside. Discard bones from turkey and shred meat. Stir turkey into sauce still in slow cooker. Cover and cook on high while preparing onions. In a large nonstick skillet, cook onions, covered, over medium heat ten minutes or until softened and lightly browned. Add reserved sauce to onions and simmer ten minutes. Stir onions into turkey mixture and serve.
| | 4. | Fire roasted tomato soup | | | Category: Soup This incredible soup is best served with a dallop of sour cream on top. Sometimes I even like to add a few tortilla chips into the bowl when I'm serving it. Just the right thing when you want to eat something warm but not too heavy. If you want a truly vegetarian version, substitute vegetable broth for the chicken broth.
2 cans Fire roasted tomatoes 1 can Chicken broth, about 14 ounces 1 tablespoon butter 1 tablespoon onion, chopped 2 cloves garlic, minced 2 tablespoons basil, fresh is best 1 teaspoon sugar 1/4 teaspoon red pepper 1/2 cup whipping cream
Chop onion. Melt butter. Add onion, garlic, basil, red pepper flakes, broth, tomatoes, and sugar. Bring to a boil. Allow to simmer at least 30 minutes. Divide soup in half and blend each half in an osterizer. (Allow soup to cool slightly before blending, and make sure to hold the lid on tight). Return soup to pot. Add whipping cream and stir. Serve with sour cream.
| | 5. | Pulled Pork Enchiladas | | | Category: Pork / casserole This simple method makes an unbelievably good pork roast. You can serve it as shown here or eat the meat by itself.
1 cup pork roast 1 jar salsa 2 cups brown sugar 8-10 cups flour or wheat tortillas 2 cups cheddar or favorite mixed cheeses, grated 2 cups lettuce, shredded 1 cup sour cream
Combine roast, salsa and brown sugar in slow cooker and cook on low 8 hours or on high 5 hours. Shred with fork. Serve in tortillas with cheese, lettuce, and sour cream as toppings.
| | 6. | Favorite Broccoli Casserole | | | Category: Vegetarian / casserole This broccoli casserole is a delicious way to sneak in some healthy vegetables!
20 ounces frozen chopped broccoli, cooked, drained 1 can cream of chicken soup 2 cup rice, cooked 1/4 cup butter 1 cup onion, chopped 1 jar cheese whiz, 8 oz 1 cup celery, chopped 1/2 cup milk
Melt butter in skillet. Saute celery and onions until tender and add soup and milk. Pour into a large casserole dish and mix in broccoli, cheese, and cooked rice. Mix well. Bake at 350 for 30 minutes.
Optional: add chicken into the mix before baking. In last 5 minutes, sprinkle with grated cheddar cheese and return to oven to melt before serving.
| | 7. | Simple Sunday Roast | | | Category: Pork / casserole simple sunday roast
4 cup pork roast 1 package dry onion soup mix 2 can coca cola, 12 oz each
Place roast in greased slow cooker. Sprinkle on soup mix, and pour soda over all. Cook on low heat about 8 hours.
| | 8. | Easy Southwest Chicken | | | Category: Chicken / slow cooker This chicken has a bit of a kick and will quickly become a family favorite.
1 can cream of chicken soup 1 jar salsa 5 jar boneless, skinless chicken breasts
Mix soup and salsa together. Pour over chicken breasts in greased slow cooker. Cook on low heat 6-8 hours. Serve over hot rice and sprinkle with shredded cheddar cheese if desired.
| | 9. | Mexican Manicotti | | | Category: Mexican food This is a twist on a favorite dish that will have you begging for seconds! This was submitted by Melissa Warner.
1 pound ground beef 1 can refried beans, 16 ounce size 21/2 teaspoons chili powder 11/2 teaspoons Oregano 1 package manicotti, 8 ounce package 1 can enchilada sauce, 19 ounce size 2 cups sour cream 1 cup Mexican style cheese, shredded
Cook ground beef. Boil manicotti shells according to package directions. In a bowl, combine cooked beef, refried beans, chili powder and oregano. Spoon into cooked shells. Arrange shells in the bottom of a 9x13 baking dish. Pour enchilada sauce over top. Cover and bake at 350 degrees for 30 minutes. Uncover and spoon sour cream over top. Sprinkle with cheese. You can also top with diced green onions, diced tomatoes, sliced olives, etc. Bake additional 5-10 minutes until cheese is melted.
| | 10. | Sweet and Sour Chicken | | | Category: Chicken / baked sweet and sour chicken, a classic favorite.
4 cup boneless, skinless chicken breasts, cubed or whole 1 cup ketchup 1 cup distilled white vinegar 1 cup brown sugar
Mix ketchup, vinegar and sugar. Pour over chicken. Bake in crock pot on low 6 hours or in oven at 350 for about 45 minutes. Serve with rice.
| | 11. | Tofu-Coconut Curry | | | Category: Vegetarian / casserole If you like curry you'll love this healthy vegetarian meal!
1 package rice noodles 1 tablespoon olive oil 1 pound tofu, firm, cubed 1/2 cup peas 1 cup red pepper, sliced 1/2 cup onion, chopped 1 teaspoon garlic 1 teaspoon ginger 1 can coconut milk 2 tablespoons sugar 2 tablespoons lime juice 1 tablespoon red curry paste
Cook rice noodles per package directions. In skillet, heat oil. Add cubed tofu, peas, sliced red bell pepper and chopped onion. Add ginger and garlic. Cook for 5 minutes. Add coconut milk, sugar, lime juice, and red curry paste. Cook for an additional 2 to 3 minutes. Serve over rice noodles. Garnish with lime wedges if desired.
| | 12. | Tater Tot Casserole | | | Category: Vegetarian / casserole This is a family favorite that packs a punch of flavor!
1 package tater tots, 32 ounce size 1 jar sour cream, 16 ounce size 1 cup cheddar cheese, shredded 1 can cream of mushroom soup, 10.75 ounce size 1 can french fried onions, 6 ounce size
Place tater tots in bottom of greased 9x13 baking dish. Combine sour cream, cheese and soup together and pour over tots. Sprinkle onions over top of casserole and bake 45 minutes at 350 degrees.
| | 13. | Lasagna Casserole | | | Category: Beef The perfect casserole for company or a family dinner. Easy, filling, and delicious!
1 package lasagna noodles, (8 oz) 1 package ground beef 3 can tomato sauce, (8 oz) 1 cup cottage cheese 1 package cream cheese 1/2 cup sour cream 1/4 cup green onion, chopped 1 tablespoon green pepper, chopped 1 tablespoon butter, melted
Cook lasagna noodles according to package directions. Drain. Brown ground beef in skillet. Add tomato sauce. Combine cottage cheese, cream cheese, sour cream, green onions and green pepper. Spread half the noodles in buttered 2 quart casserole. cover with cheese mixture. Top with remaining noodles. Pour melted butter over noodles. Put beef mixture on top. Bake at 350 for about 35 minutes or until hot and bubbly.
| | 14. | Chicken Spaghetti Southwest | | | Category: Pasta / casserole A delicious southwestern dish that adds a bit of spice to a classic meal.
1 teaspoon olive oil 2 teaspoon boneless, skinless chicken breasts 11/2 cups marinara sauce 1 can black beans, rinsed and drained 1/2 cup corn, frozen 1 can green chilies, diced 1/2 teaspoon .125 teaspoon crushed red pepper 1-2 tablespoon cilantro 12 ounces spaghetti, cooked and drained
Cut chicken into thin strips. Saute in olive oil until no longer pink. Add marinara sauce, black beans, corn, chilies, cilantro, cumin, and red pepper. Bring to a boil; reduce heat and simmer 5 minutes. Spoon sauce over spaghetti and serve.
| | 15. | King Ranch Chicken | | | Category: Chicken / baked Another tried and true favorite! Use mild chilies if you're worried about spiciness.
1 can cream of chicken soup 1 can cream of mushroom soup 1/2 cup Chicken broth 1 can Diced tomatoes, drained 1 can green chilies, drained 6 can boneless, skinless chicken breasts, each cut in half 10 can Corn tortillas 1 can onion, chopped 2 cup cheddar or favorite mixed cheeses, shredded
Grease 9x13 pan. Mix Cream of chicken soup, cream of mushroom soup, chicken broth, diced tomatoes, and green chilies. Layer chicken, onion, tortillas, soup mixture and cheese. Bake at 350, 40-45 minutes, until cheese is bubbly.
| | 16. | Weight Watchers Easy Vegetable Lasagna | | | Category: Diet Recipes / Weight Watchers Points A delicious 6 serving meal with only 6 WW points per serving! Enjoy.
28 ounces spaghetti sauce 6 ounces Uncooked Lasagna Noodles 15 ounces Fat-free ricotta cheese 6 ounces fresh baby spinach 8 ounces fresh sliced mushrooms 8 ounces low-fat mozzarella cheese
Preheat oven to 375. Spread 1/3 of the sauce on bottom of l9x13 casserole dish. Arrange 3 noodles in a single layer over sauce. Top with all of the ricotta cheese and vegetables, another 1/3 of sauce, and 1/2 of mozzarella cheese. Then add remaining noodles in a single layer. Spread evenly with remaining sauce. Cover dish with foil; bake until noodles are tender and mixture is piping hot, about 1 hour. Sprinkle with remaining mozzarella cheese; bake uncovered 5 minutes longer. Let stand 5 minutes before serving.
| | 17. | Cranberry Chicken | | | Category: Chicken / baked This crowd pleaser looks beautiful and tastes wonderful!
4 ounces boneless, skinless chicken breasts 1 packet of onion soup mix 1/2 bottle Russian salad dressing 1 small can cranberry sauce 1 teaspoon pepper
Coat chicken in flour and sprinkle with pepper. Lay chicken in a greased or foil lined baking dish. Mix all other ingredients and pour over chicken. Bake at 350 for 50 minutes.
We like to serve this with brown or white rice and boiled carrots coated with butter and brown sugar.
| | 18. | Carne Asada Tacos | | | Category: Mexican food / Slow Cooker This is a yummy twist on traditional beef tacos. You can marinate the meat yourself or find marinated ranchera meat if possible.
1 pound flank steak 1 teaspoon salt 1 Medium onion, diced 2 cloves garlic, minced and divided 3 cloves chiles verde, (Anaheim chiles) 12 cloves Corn tortillas 1 bottle lime marinade
Marinate flank steak in lime marinade in fridge for at least two hours. Slice flank steak very thinly and then cut it into 1/2 inch wide strips. Put meat in skillet with just enough water to cover. Sprinkle with salt. Bring to a boil then decrease heat to medium-low and cook about five minutes. Add the onion and one mined garlic clove. Continue to simmer about twenty minutes, adding water as necessary. Meanwhile, put chiles in saucepan and add water to about half full. Bring to a boi and cook until the chiles are very tender, about 15 minutes. Add hot water as necessary to keep water level the same. Remove chiles to cutting board, reserving the water. When the meat is very tender, continue to cook, allowing remaining water to evaporate. Cut the chiles in half lengthwise and then in thirds, discarding the stem. Puree in food processor with remaining garlic. Add a small amount of water if necessary to make creamy sauce. Add a pinch of salt to taste. Spoon sauce into small serving bowl. Heat tortillas and serve along with meat and sauce and any other desired topping such as tomato and sour cream.

1 bunch Asparagus, trimmed and cut in half 1/3 cup water 8 slices french bread 1/4 cup butter 1/3 cup Mayonnaise 1/3 cup Parmesan, shaved 8 cup lettuce, leaves
Heat asparagus and water in microwave safe bowl on high 1 minute, until tender. Rinse in cold water and blot dry. Spread one side of bread slices with butter and mayo. Layer with asparagus, cheese and lettuce, the season with pepper. Top with remaining bread slices.
| | 20. | Italian Focaccia sandwiches | | | Category: Sandwich / beef The combination of flavors in this sandwich can't be beat! Yummy.
1/4 cup kalamata olives 1/4 cup sun-dried tomatoes 4 tablespoons Italian salad dressing 1 loaf focaccia bread 4 ounces salami 1/4 cup fresh basil leaves 9 slices provolone cheese
Chop olives. Drain oil from tomatoes. Combine olives, tomatoes, and 1 tablespoon dressing in a small bowl; set aside. Cut bread in half horizontally. Brush cut sides of bread with remaining dressing. Layer salami, basil (chopped) and cheese over bottom half of bread. Spread olive mixture over cheese; cover with top of bread. Cut into wedges.
| | 21. | Bowtie Chicken Pasta Salad | | | Category: Pasta This is a simple and tasty classic that is great year round! This serves about 12 so add or divide as needed.
1 package bowtie pasta 2 cups red grapes, sliced in half 2 cups green apple, cut into bite size pieces 3 cups boneless, skinless chicken breasts, cooked and shredded 1 jar Cole slaw dressing
Boil pasta about 12 minutes. Rinse well and toss with remaining ingredients. Chill at least one hour before serving.
| | 22. | Tortellini Primavera | | | Category: Pasta Simple and divine!
1 package cheese tortellini, 20 ounces 1 bag frozen sugar snap stir-fry peas 1/2 pound sugar snap peas, halved if desired 1/2 cup Diced tomatoes 1 jar Alfredo sauce, 16 ounces
Cook tortellini as per package instructions. Add vegetables two minutes before pasta is done. Cook until tender. Drain. Pour sauce into pasta pot and cook over low heat until hot. Remove from heat, add pasta and vegetables and toss to mix and coat.
| | 23. | Zesty Glazed Salmon | | | Category: fish A delicious salmon dish!
4 tablespoons pineapple fruit spread 3 tablespoons red pepper jelly 1/2 tablespoons scallion, chopped 1 tablespoons lime 11/2 pounds salmon filet
Heat grill or broiler. In saucepan over medium heat, combine pineapple fruit spread, red pepper jelly, scallions, 1 tablespoon lime juice and .5 teaspoon lime zest. Stir until mixture has melted, or for about 1 minute. Place salmon fillet skin side down on sheet of greased aluminum foil. Brush salmon with half of the pineapple mixture. season with salt and pepper to taste if desired. Grill (with cover closed) or broil 10 to 12 minutes, brushing occasionally with remaining pineapple mixture until fish flakes easily with a fork.
| | 24. | Quesadillas | | | Category: Vegetarian / casserole Simple and quick to make, quesadillas are sure to please! Use low carb tortillas for a low carb option.
4 pounds Tortillas 1 cup refried beans 2 cups Monterey Jack cheese, shredded 3 tablespoon onion, chopped
Place two tortillas on plate. Spread beans, then cheese, then onions. Top with remaining tortillas. Spray frying pan with cooking spray, and cook about 3 minutes per side on medium heat. Cut into wedges and serve with garnishes.
| | 25. | Simple Beef Stroganoff | | | Category: Beef / Barbecue As delicious as it is easy, this is a recipe you can start in the morning and it will be ready in the evening!
1 pounds stew meat, cubed 1/3 cup onion, dried, minced 1 can cream of mushroom soup 1 small can mushrooms 1/4 teaspoon garlic salt 1 cup sour cream, or 1 8 oz. package cream cheese
Combine all ingredients except sour cream or cream cheese in slow cooker and cook on low heat 6 to 8 hours. Add sour cream or cream cheese for the last hour. Serve over hot noodles.
| | 26. | Salmon Patties | | | Category: fish Easy and delicious. I like to use this if I have leftover salmon patties, but it also works well with canned salmon.
1 can salmon filet, (or 15 oz fresh salmon, baked or grilled) 2 can eggs 5 tablespoons butter, divided 11/2 tablespoons Dry mustard 1 Small onion .75 cup butter crackers, crushed 1/4 cup Parsley
Drain salmon, reserving the liquid. Chop onion, crush crackers into crumbs, and beat eggs. Flake salmon. Melt 2 Tablespoons butter into a large skillet over medium-high heat. Cook onion about 5 minutes, or until tender. In medium bowl, combine chopped onions, reserved salmon liquid, 1/3 cup cracker crumbs, eggs, parsley, mustard and salmon. Mix until well blended. Shape into Medium patties (about 5-7 patties) and coat in remaining cracker crumbs. Melt remaining butter in large skillet over medium heat. Cook patties until browned on both sides.
| | 27. | Tomato-Basil Chicken | | | Category: Chicken / baked Simple and delicious for anytime of year!
4 cup boneless, skinless chicken breasts 1 cup plain yogurt 5 ounces tomato-basil wheat thins, about half a box 1/4 cup Parmesan, grated 1/4 teaspoon garlic powder 1/4 teaspoon salt 1/4 teaspoon pepper 1 tablespoon Parsley, flakes 1 can cream of chicken soup 1 cup milk
Pour yogurt into a small dish. Crush crackers into fine crumbs. In a separate dish, blend cracker crumbs with parmesan cheese and seasonings. Dip chicken breast halves into yogurt, coating both sides. Roll in crumbs until well coated. Place in greased baking pan. Bake at 350 degrees for about one hour. For sauce, combine soup and milk in a saucepan and cook over medium heat until hot. Serve over chicken.
| | 28. | Baked French Toast | | | Category: Vegetarian / casserole If your house is like ours, everyone loves breakfast for dinner!
1/2 cup french bread, (about 1/2 loaf) cut diagonally into 1 inch square 4 cup eggs 1 cup milk .75 cup half and half cream 1 teaspoon vanilla 1/4 teaspoon cinnamon 1/2 cup butter .75 cup brown sugar 11/2 tablespoon light corn syrup
Butter a 9x13 baking dish. Arrange slices of bread in the bottom. In a large bowl, beat together eggs, milk, cream, vanilla, and cinnamon. Pour over bread, cover and refrigerate 6-8 hours. Combine butter, brown sugar, and corn syrup. Heat until bubbling. Pour over bread slices and bake uncovered at 350 for about 40 minutes.
| | 29. | Steak Pizzaiola | | | Category: Pasta This recipe makes a heary mixture you can serve by itself or over your favorite pasta. We use fettucine noodles.
2 pounds top round steak, cut into pieces 1 bag frozen stir-fry peppers and onions, 16 ounces 1 jar mushroom pasta sauce, 26 ounces 1 bag fettuccine pasta
Cook steak over medium-high heat in nonstick skillet about ten minutes or until browned. Transfer steak to slow cooker. Add peppers and onions to skillet and cook until partially thawed (about two minutes). Stir in pasta sauce. Pour over steak in slow cooker. Cover and cook on high for 4 hours or low for 8 hours. Cook noodles according to directions. Drain, rinse and serve with sauce.
| | 30. | Waldorf Chicken Salad | | | Category: Salad / chicken A great light meal for Spring or Summer!
2 bag boneless, skinless chicken breasts, cooked and diced 2 bag apples, cored and diced 2 stalks celery, chopped 1/2 cup walnuts, chopped 1/3 cup yogurt 1/3 cup Mayonnaise 1 tablespoon honey
Mix chicken, apples, celery and walnuts. Set aside. Stir together yogurt, mayo and honey. Pour over chicken mixture and mix well to coat evenly. Season with salt and pepper if desired. Line plates
with lettuce leaves if desired and place salad on top of leaves.
| | 31. | Tuna Casserole | | | Category: fish / casserole A traditional family favorite with a kick!
1 package egg noodles, (12 ounce) 2 cups frozen peas 2 cans cream of mushroom soup 2 cans tuna, (6 oz. cans), drained 1 Medium onion, chopped 10 slices cheddar cheese
Boil noodles and peas together about 10 minutes, until noodles are tender. Drain and return to empty pot. Mix soup, tuna, onion, cheese and pepper into the pot. Stir until all ingredients are well mixed and cheese is melted. Serve immediately.
