11/2 pound halibut, hake or cod fillet, cut into 4 equal pieces 1/3 cup wasabi horseradish mayonnaise 1/3 cup corn flakes, crumbled
Line a rimmed baking sheet with foil. Arrange fillet pieces on foil. Spread top of fish with mayo. Sprinkle with cornflake crumbs. Bake 15 minutes at 425 degrees or until fish is opaque at centers and crumbs just begin to brown.

2 cup baking potatoes, baked 1 cup cottage cheese 1 tablespoon chives 1 teaspoon Onion Powder
Bake potatoes at 425 for one hour. Cut potatoes in half lengthwise
and scoop out insides. Return shell to oven and bake until crisp.
Whip potato insides with remaining ingredients, and add mixture to
potato skins. Return to oven and bake until thoroughly heated.

1 teaspoon Boboli Pizza Crust 11/2 cup BBQ sauce, more or less as desired 1/2 cup red onion, thinly sliced 1 can pineapple chunks, drained 2-3 can boneless, skinless chicken breasts 2 cup mozzarella cheese, shredded
Marinate chicken in one-half cup BBQ sauce. Cook on medium to high heat, about 4 minutes on each side, or until no longer pink inside. Allow chicken to cool and cut into bite-size pieces.
Add remaining cup of BBQ sauce to pizza crust. Then add cheese, chicken, pineapple, and onion slices. Bake according to pizza crust instructions.

4 cup boneless, skinless chicken breasts .75 cups ketchup .75 cups brown sugar .75 cups white distilled vinegar 1 cups onion, sliced (optional) 1 cups lemon, sliced
Place chicken in single layer in sprayed baking dish. Place one slice lemon and one slice onion on each piece. Combine ketchup, brown sugar, and vinegar. Pour over meat. Bake at 350 for 45-60 minutes. Serve over rice.

12 ounces tuna, well drained 4 tablespoon Mayonnaise 1 tablespoon mustard 1/4 teaspoon salt 4 teaspoon Englilsh Muffin, halved 1 teaspoon tomatoes 8 slices cheddar cheese 1/2 cup celery, chopped
Drain tuna well and break up with a fork. Add mayonnaise, mustard, salt, and chopped celery. Mix. Lightly toast 4 english muffins, each halved. (8 slices total). Top each English Muffin with 1/8 tuna mixture. Top each muffin with a slice of tomato and a slice of cheese. Broil 3 to 5 minutes, until cheese is golden and bubbly.
| | 6. | Spicy Chicken and Black Bean Fettuccine | | | Category: Pasta / casserole Although this recipe calls for more ingredients than our typical recipes, you'll be glad you made the extra effort! If you don't like it quite as spicy, omit the green chilies. Delicious served with crusty bread and a salad.
1/4 cup extra virgin olive oil 4 cup boneless, skinless chicken breasts 1 tablespoon chili powder 2 teaspoons cumin 1 tablespoon minced garlic 1 can green chile peppers 1 bunch green onion, chopped 1 can black beans, drained and rinsed 8 ounces feta cheese, crumbled 1 pound fettuccine pasta, cooked al dente 1/2 cup cilantro, chopped 3 cup Roma tomatoes, chopped
Heat olive oil in medium skillet over medium heat. Cut chicken into bite size pieces. Add chicken, chili powder, cumin and garlic. Saute until cooked through, but not browned. Remove chicken and set aside. Return skillet to heat. Add chilies and green onions. Saute 3 to 4 minutes. Stir in black beans. Heat about 3 minutes. Add feta and chicken, and heat thoroughly. Remove from heat and stir in tomatoes. Toss pasta gently with sauce and sprinkle with cilantro.
| | 7. | Steak Pizzaiola | | | Category: Pasta This recipe makes a heary mixture you can serve by itself or over your favorite pasta. We use fettucine noodles.
2 pounds top round steak, cut into pieces 1 bag frozen stir-fry peppers and onions, 16 ounces 1 jar mushroom pasta sauce, 26 ounces 1 bag fettuccine pasta
Cook steak over medium-high heat in nonstick skillet about ten minutes or until browned. Transfer steak to slow cooker. Add peppers and onions to skillet and cook until partially thawed (about two minutes). Stir in pasta sauce. Pour over steak in slow cooker. Cover and cook on high for 4 hours or low for 8 hours. Cook noodles according to directions. Drain, rinse and serve with sauce.

12 bag lasagna noodles, cooked 2 cup cottage cheese 2 cup marinara sauce 2 cup mozzarella cheese, grated 1 cup ground beef, browned 1/2 cup Parmesan, shredded
Combine cottage cheese, marinara sauce, mozzarella cheese and meat. Layer a coated, 9x13 baking dish with 3-4 noodles. Top with 1/3 of sauce mixture. Repeat this pattern until pan is full or all ingredients are used. Sprinkle parmesan cheese on top and bake at 350 for about 40 minutes.

1 pound ground beef 1 package rigatoni pasta, 16 ounce size 1 package cream cheese, 8 ounce size 1 jar spaghetti sauce 2 cups mozzarella cheese, shredded
Cook noodles as directed. Brown beef. Add sauce to meat and warm through. Layer noodles, chunks of cream cheese (dime size), meat sauce, and mozzarella cheese in 9x13 baking dish. Repeat layers until all ingredients are gone. Bake at 350 degrees for 20-30 minutes until cheese is melted.

1/2 cups french bread, (about 1/2 loaf) cut diagonally into 1 inch square 4 cups eggs 1 cup milk .75 cup half and half cream 1 teaspoon vanilla 1/4 teaspoon cinnamon 1/2 cup butter .75 cup brown sugar 11/2 tablespoon light corn syrup
Butter a 9x13 baking dish. Arrange slices of bread in the bottom. In a large bowl, beat together eggs, milk, cream, vanilla, and cinnamon. Pour over bread, cover and refrigerate 6-8 hours. Combine butter, brown sugar, and corn syrup. Heat until bubbling. Pour over bread slices and bake uncovered at 350 for about 40 minutes.

1 can Low fat cream of chicken soup 1 package Frozen Mixed vegetables 3 package boneless, skinless chicken breasts, cooked and cubed 1/2 cup milk 1 cup egg 1 cup Reduced Fat Bisquick
Preheat oven to 400. Put cooked and cubed chicken and thawed vegetables in a 9-inch pie plate coated with non-stick cooking spray. Mix milk, egg, and bisquick. Pour over chicken mixture. Bake for about 25 minutes, or until bisquick mixture turns golden brown.

1 pound ground turkey 1 jar salsa 1 package taco seasoning 4-6 package Tortillas, wheat or flour 1 cup cheddar cheese, shredded
Cook turkey over medium-high heat about ten minutes. Transfer turkey to slow cooker and stir in salsa and taco seasoning. Cook on high four hours or low for eight. Serve inside of tortillas with cheese.
| | 13. | Cheesy Pasta Salad | | | Category: Salad / chicken This is a basic recipe you can use as is or add as many ingredients as you want! To make it a little heartier, add some cooked, cubed chicken breast.
1 package bowtie pasta 2 stick of string cheese, cut into bite size pieces 2 stick of tomatoes, small 1 bunch broccoli 1 bottle Berenstein Salad Dressing, small bottle 1 bottle cucumber 1 bottle carrot, large 1 can olives, sliced
Cook and drain pasta. Pour a little dressing on pasta so it won't stick, then cool it in the fridge. Cut the vegetables into small pieces. Once pasta is cold, add vegetables and cheese and most of the bottle of dressing. If you aren't serving right away, save some dressing to pour over salad right before serving.

1 can pork roast 1 jar BBQ sauce 1 package hamburger buns, toasted
Place roast in crock pot and pour sauce over it. You can use more or less than one jar as desired. Cook on low about hours or high about 5 hours. Shred meat into skinny strands using two forks. Serve on toasted hamburger buns.

25 package Meatballs, cooked and frozen 1 can cranberry sauce 1 jar salsa
Mix cranberry sauce and salsa with a wire whisk. Pour sauce in a slow cooker. Add frozen meatballs. Cook on low 4-5 hours, or high 2-3 hours. Spoon meatballs and sauce over rice.

1 pound ground beef 1 pound onion, chopped 2 cloves garlic, minced 2 cups water 1 can Stewed tomatoes, 15 oz. 1 can Beef broth 1 teaspoon chili powder 1 tablespoon Parsley 1 cup Spiral pasta, uncooked
in large sauce pan, brown ground beef, garlic, and onion. Add water, stewed tomatoes, beef broth, chili powder, and parsley. Bring to a boil. Reduce heat and simmer 45 minutes. Add pasta and simmer until pasta is tender.
| | 17. | Breakfast Sausage Casserole | | | Category: Pork / casserole A delicious breakfast casserole. Just make sure to prepare it at least 8 hours ahead.
8 slices white bread 2 cups cheddar cheese, grated 4 cups eggs 3 cups milk 1 teaspoon salt 1/4 teaspoon Dry mustard 1 can cream of chicken soup 1/2 cup milk 11/2 pounds link sausage, browned and cut into thirds 1/4 stick of butter
Brown sausage in skillet and cut into thirds. Butter bread, then cut off crusts and cube. Place bread in bottom of buttered 9x13 dish. Cover with sausage. Top with grated cheese. Beat eggs with 2.5 cups milk, salt, and dry mustard. pour egg mixture over sausage, bread, and cheese. Cover and refrigerate at least 8 hours. Before baking, add one-half cup milk to cream of chicken soup. Pour over casserole. Bake at 300 for 1.5 hours, uncovered.
| | 18. | Favorite White Bean Chicken Soup | | | Category: Soup / beef Absolutely delicious! Perfect to warm you up on a cold day.
2 tablespoons olive oil 1 tablespoons onion, chopped 2 cloves garlic, minced 3 cloves boneless, skinless chicken breasts, cooked and chopped 1 package frozen white corn, 9 ounces 2 cans Great Northern beans, undrained 7 ounces green chilies, diced 1/2 teaspoon cumin 1/2 teaspoon coriander 1/2 teaspoon Oregano 1/4 teaspoon cayenne pepper, optional 3 cups Chicken broth 3 tablespoons lime juice
Saute onion and garlic in olive oil. Add cooked and chopped chicken, corn, beans, green chilies, spices, broth, and lime juice. Stir until well blended. Bring to a boil, then turn heat to low and simmer for 20 to 30 minutes. Garnish with sour cream, corn chips, and grated cheddar cheese.

4 tablespoons chicken thighs, skinless 1 jar five cheese pasta sauce, 26 ounce 1 bag frozen brocolli, 16 ounce
Cook chicken for ten minutes over high heat in a large skillet with a tablespoon of oil. Transfer chicken to slow cooker and cook on high for four hours. Set chicken aside, you may cover with foil to keep hot. Place thawed brocolli and cheese sauce in slow cooker and cook on high 20 minutes. Return chicken to slow cooker and cook an additional five minutes or until hot.

1 cup onion, finely diced 1 cup celery, finely diced 2 cups potatoes, diced 2 can minced clams .75 cup butter .75 cup flour 1 quart half and half cream 1 teaspoon salt 2 tablespoon red wine vinegar
In a large pan mix onion, celery and potatoes. Drain clams, adding clam juice to vegetables in pan. Add enough water to barely cover vegetables. Simmer about 20 minutes or until tender. In another pan, melt butter. Add flour and stir constantly. slowly add cream and cook until thick and smooth. Add vegetables and juice, clams, salt and pepper. Add vinegar last.

1 teaspoon olive oil 2 teaspoon boneless, skinless chicken breasts 11/2 cups marinara sauce 1 can black beans, rinsed and drained 1/2 cup corn, frozen 1 can green chilies, diced 1/2 teaspoon .125 teaspoon crushed red pepper 1-2 tablespoon cilantro 12 ounces spaghetti, cooked and drained
Cut chicken into thin strips. Saute in olive oil until no longer pink. Add marinara sauce, black beans, corn, chilies, cilantro, cumin, and red pepper. Bring to a boil; reduce heat and simmer 5 minutes. Spoon sauce over spaghetti and serve.

1 ounces ground beef, lean 1 ounces onion, finely chopped 6 ounces potatoes, thinly sliced 1 can cream style corn 1 cup milk
Dice onion and wash and slice potatoes. In a large skillet, brown ground beef and onion. Place potato slices in the bottom of a greased casserole dish. top with ground beef and onion mixture. Spread corn over meat. Pour milk on top. Season with salt and pepper. Bake at 350 for 90 minutes.

3 cup Top Round, London Broil cut beef, cubed 5 cup potatoes 1 cup red onion, sliced 1 cup green pepper, chopped 11/2 cup mushrooms, sliced 16 ounces red wine and vinegar salad dressing
Preheat oven to 350. Meantime, peel and cube potatoes, slice red onion, chop green pepper, and slice mushrooms. In a large skillet over medium-high heat, saute meat until well browned on all sides. Place meat in a 10x15 baking dish. Next, place the potatoes, onion, pepper, and mushrooms over the meat. Top with salad dressing and cover with foil. Bake at 350 for one hour, or until potatoes are tender.

1 pound ground beef 1 can refried beans, 16 ounce size 21/2 teaspoons chili powder 11/2 teaspoons Oregano 1 package manicotti, 8 ounce package 1 can enchilada sauce, 19 ounce size 2 cups sour cream 1 cup Mexican style cheese, shredded
Cook ground beef. Boil manicotti shells according to package directions. In a bowl, combine cooked beef, refried beans, chili powder and oregano. Spoon into cooked shells. Arrange shells in the bottom of a 9x13 baking dish. Pour enchilada sauce over top. Cover and bake at 350 degrees for 30 minutes. Uncover and spoon sour cream over top. Sprinkle with cheese. You can also top with diced green onions, diced tomatoes, sliced olives, etc. Bake additional 5-10 minutes until cheese is melted.

11/2 cup elbow macaroni 10 ounces mixed vegetables, frozen 1/2 ounces onion, chopped 1 can cream of chicken soup 1 cup sour cream 1 can mushrooms, drained 1/2 cup carrots, shredded 1/2 cup milk 1 teaspoon Oregano, dried, crushed 1/4 teaspoon pepper 2 teaspoon boneless, skinless chicken breasts, cooked and cubed 3 tablespoon Parmesan
Cook pasta per package directions. Add the frozen vegetables and onion for the last 5 minutes of cooking time. Drain. In a large bowl, combine cream of chicken soup, sour cream, mushrooms, carrotts, milk, oregano, and pepper. Add to the drained pasta and veggies. Add meat if desired. Stir gently. Put this mixture in an ungreased baking dish. Bake at 350 for about 35 minutes, covered. Uncover, add parmesan cheese, and bake for an additional 2 to 3 minutes.

4 tablespoon Tortillas 1 cup refried beans 2 cups Monterey Jack cheese, shredded 3 tablespoon onion, chopped
Place two tortillas on plate. Spread beans, then cheese, then onions. Top with remaining tortillas. Spray frying pan with cooking spray, and cook about 3 minutes per side on medium heat. Cut into wedges and serve with garnishes.

2 pounds stew meat 6 pounds carrots, sliced thin 6 pounds potatoes, medium sized, sliced thin 2 pounds apples, chopped 2 teaspoons salt 1/2 cup onion, chopped 2 cups apple cider
Place apples and all vegetables in crock pot. Add meat lightly sprinkled with salt. Pour cider over meat. Cook on low about 8 hours. Use flour to thicken sauce if needed.
| | 28. | Italian Flank Steak | | | Category: Beef / Barbecue We won't tell your guests how easy this delicious steak is to make! The key is in the marinating and grilling!
3 cups Italian salad dressing 2 cups flank steak
Marinate the steak overnight (or at least 3 hours) in dressing. Preheat grill to high heat. Oil the grill rack (oil a folded paper towel, hold with tongs and rub it over the rack). Grill steak to desired doneness, 5 to 6 minutes per side for medium. Transfer to a plate and cover with foil. Let sit for five minutes. Slice the steak very thinly across the grain. You can serve this warm or chilled.

1/2 pound ground beef, lean 1 pound red onion, small, chopped 2 cans Stewed tomatoes, Mexican style 1 can kidney beans, undrained 1 can corn, undrained 1 package taco seasoning 1 can tomato soup
Brown meat and onion. Drain well. Add the rest of the ingredients into a soup pot and simmer for at least 15 minutes. Top each bowl of soup with sour cream, Fritos, and grated cheddar cheese.

4 can boneless, skinless chicken breasts, boiled and shredded 12 can refrigerator biscuits, each rolled out flat 1 cup bread crumbs, seasoned 8 ounces cream cheese 2 ounces eggs
Mix together cream cheese and shredded chicken. Scoop some of mixture into each flattened biscuit and form biscuit into a ball to cover all of mixture. Beat eggs into a bowl and dip each biscuit in eggs and then coat with bread crumbs. Line a greased cookie sheet with biscuits and bake at 375 for about 12 minutes. Any leftovers can be frozen until ready use.

5 ounces boneless, skinless chicken breasts 1 cans cream of chicken soup, 11 ounces 1 package cream cheese, softened, 8 ounces 1 package Good Seasons Italian Dressing mix 4 cups rice
Put chicken on bottom of greased slow cooker. Combine soup, cream cheese, and dressing mix. Pour over chicken. Cook on high for 5 hours, or low for 8-10 hours. Before serving, cook rice according to package directions. Top rice with chicken and sauce.
